Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salmon
Provides the main flaked body and protein that gives the croquettes their structure.
Mashed potatoes
Adds bulk and moisture, and helps the mixture hold together when shaped.
Egg
Binds the mixture and forms a coating that helps breadcrumbs stick.
Breadcrumbs (in the method)
Form a crisp, golden outer crust when fried.
Butter
Adds fat for richness and a softer, more rounded flavour in the mixture.

The step that matters

Fry in hot oil until golden brown. Hot oil sets the egg and breadcrumb coating quickly, so the croquettes crisp on the outside and absorb less oil. Oil that is too cool lets them soak up grease and can make them break apart.

Swap the parsley

How well each one fits the dish's main ingredients (salmon, potato, butter, milk, egg, pepper):

  1. Parsleythe original
  2. Dillfits about as well
  3. Nutmegfits about as well
  4. Thymefits less well

Fit is the average pairing score against salmon, potato, butter, milk, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
