Potato Souffle

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the base

  1. Beat the hot mashed potatoes until light and soft.

  2. Mix in warm milk and butter.

  3. Add the egg yolks, pepper, and salt, then transfer to a greased pudding dish.

Top and bake

  1. Bake in a 350°F (175°C) oven until it begins to brown.

  2. Whip the egg whites with salt and pepper until stiff, then spread over the top.

  3. Dot with tiny bits of butter and return to the oven until slightly colored.

Serve

  1. Serve immediately before it falls.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Provide the bulk and soft body of the soufflé base.
Egg yolks
Enrich the base and add richness and structure as it sets.
Egg whites
Whipped into foam to lift the topping and give it airy volume.
Butter
Adds fat for richness and helps the top take on golden color.
Milk
Loosens the potato base to a smooth, pourable texture.

The step that matters

Whipping the egg whites. Egg whites must be whipped until stiff so they trap air. Under-whipped or deflated whites will not lift the soufflé, and it will sink.

Swap the potato

How well each one fits the dish's main ingredients (milk, butter, egg, pepper):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Asparagusfits about as well
  4. Chivefits less well

Fit is the average pairing score against milk, butter, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
