Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. In a saucepan, heat the milk with the lemon rind and sugar until boiling. Remove the rind.

  2. Whisk in the beaten eggs until well combined.

Assemble and bake

  1. Butter a mold and line it with citron and raisins in a decorative pattern.

  2. Layer slices of sponge cake or ladyfingers with raisins in the mold.

  3. Pour the custard mixture over the layers.

  4. Cover the mold and place it in a deep pan filled with boiling water.

  5. Bake in a 350°F (175°C) oven for one hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard as they cook, giving the pudding its firm, sliceable body.
Sponge cake or ladyfingers
Absorb the custard and hold the pudding together in layers.
Milk
Forms the liquid base of the custard that sets around the layers.
Sugar
Sweetens the custard and adds flavor.

The step that matters

Place the mold in boiling water. The water bath moderates the heat reaching the custard, so the eggs set gently and evenly without curdling or becoming rubbery at the edges.

Swap the raisin

How well each one fits the dish's main ingredients (milk, lemon, sugar, egg, butter):

  1. Vanillafits better
  2. Figfits better
  3. Peachfits about as well
  4. Raisinthe original

Fit is the average pairing score against milk, lemon, sugar, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
