Lobstbrs, Crabs, Prawns, and Shrimps, to Boil

Ingredients

Directions

Prepare

  1. Choose lobsters by weight; males are preferred for eating, females for sauce.

  2. In a tin pot, bring water to a boil and add 1 tablespoon of coarse sea salt for every quart of water.

Boil

  1. Add the lobsters and cover immediately to maintain a rapid boil.

  2. Boil for 30 to 60 minutes, depending on size, until they turn bright scarlet.

  3. Skim the saucepan frequently and wipe any scum off the lobsters.

Finish and serve

  1. Rub the shells with fresh butter or sweet oil for a glossy finish.

  2. Before serving, crack the claws and cut the tail down the middle, laying it open on a dish with the head upright and claws at each end.

  3. Garnish with parsley and serve with oil, vinegar, and cayenne.

What each ingredient does

Lobsters
The main protein; its shell and flesh set during the rapid boil.
Coarse sea salt
Seasons the boiling water so the lobster meat is lightly flavoured as it cooks.
Fresh butter or sweet oil
Adds fat and a glossy sheen to the cooked shells.

The step that matters

Keep the boil rapid after adding the lobsters. Cover the pot immediately so the water returns to a boil quickly. A slow, weak boil cooks the lobster unevenly and can leave the meat tough or undercooked near the shell.

Swap the parsley

How well each one fits the dish's main ingredients (lobster, butter, vinegar):

  1. Tarragonfits better
  2. Capersfits about as well
  3. Parsleythe original
  4. Garlicfits about as well

Fit is the average pairing score against lobster, butter, vinegar. Candidates are from the same food group and used in at least 100 recipes.
