Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide structure and binding, setting the batter as it cooks.
Flour
Forms the starch framework that gives the pancakes body.
Milk
Adds moisture and loosens the batter to a pourable consistency.

The step that matters

Stir the batter before each pour. Flour and other solids settle to the bottom of the batter while it stands. Stirring before each pour keeps the mixture even, so each pancake has consistent thickness, texture and browning.

Swap the ginger

How well each one fits the dish's main ingredients (egg, flour, milk, nutmeg):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Gingerthe original

Fit is the average pairing score against egg, flour, milk, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
