Why it works: Onion and pepper are a kitchen classic. They rank in the top 11% of all ingredient pairs, and 68,474 recipes mention both. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Giblet Pie
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the giblets
Clean the giblets thoroughly and stew them in a little water with the onion, sweet herbs, and cayenne pepper.
Once cooled, cut the gizzard into three or four pieces and the liver into two pieces. Season with salt.
Assemble and bake
Prepare puff pastry and line the sides of a pie dish.
Place the chopped rump steak at the bottom of the dish and fill with the giblets.
Cover with more pastry and bake at 400°F (200°C) for two hours.
Make the gravy and serve
Instead of water, use some of the giblet cooking liquid, thicken the remainder with butter and flour, and add it hot after baking.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much aroma chemistry they share, and how many recipes mention both.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Giblets from goose or duck
- Provide the main meaty filling and rich, savoury flavour of the pie.
- Rump steak
- Adds meaty body and juices that moisten the filling as it cooks.
- Puff pastry
- Forms a crisp, flaky crust that browns in the oven and encloses the filling.
- Butter
- Adds richness and, with flour, forms a roux that thickens the gravy.
- Flour
- Thickens the cooking liquid into a smooth gravy when cooked with butter.
The step that matters
Thickening the gravy with butter and flour. Flour must be cooked in fat before liquid is added, or it stays lumpy and tastes raw. Adding the gravy hot, as the record states, helps it thicken smoothly.
Flavor stand-ins for the onion
How well each one fits the dish's main ingredients (pepper, butter, flour):
- Shallotbetter flavor fit
- Chivebetter flavor fit
- Capsicumbetter flavor fit
- Onionthe original
Fit is the average pairing score against pepper, butter, flour. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
