What each ingredient does

Large saddle rock oysters
Form the main food that is fried, becoming tender and juicy inside a crisp coating.
Cornmeal
Forms a crunchy, golden coating that crisps in the hot fat.
Lard
Conducts heat to cook the coating quickly and gives it a browned, crisp finish.

The step that matters

Fry the oysters until they are a nice brown color. Oil must be hot and plentiful so the coating browns and crisps quickly. If the fat is too cool, the cornmeal absorbs grease and the oysters overcook before browning.
