Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salsify
Provides the main vegetable body and a mild, oyster-like flavor.
Milk
Forms the creamy liquid base that the salsify is cooked and served in.
Butter
Adds richness and a smooth, fatty mouthfeel to the sauce.
Flour
Thickens the milk mixture so it becomes a cohesive, creamy sauce.

The step that matters

Thicken the mixture with flour made smooth in cold milk. Flour clumps if added dry or to hot liquid. Mixing it smooth in cold milk first lets the starch disperse evenly, so the sauce thickens without lumps.
