Elderberry Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine elderberries, vinegar, lemon essence, water, and sugar.

  3. Add sifted flour to thicken the mixture as needed.

Assemble and bake

  1. Pour the filling into one pie crust and cover with the second crust.

  2. Seal the edges and cut slits in the top crust for steam to escape.

  3. Bake for 30-40 minutes or until the crust is golden brown.

What each ingredient does

Elderberries
Provide the main fruit flavour and the bulk of the pie filling.
Sifted flour
Thickens the juices so the filling sets rather than running out when sliced.
Sugar
Sweetens the tart elderberries and helps balance the vinegar and lemon.
Vinegar
Adds acidity that brightens the flavour of the berries.
Pie crusts
Form the enclosing pastry that holds the filling and browns in the oven.

The step that matters

Adding the flour to thicken. Flour must be stirred through the juices before baking so starch can gelatinise in the heat and thicken the filling. Too little leaves a runny pie, while too much can taste pasty and dull the fruit.

Swap the lemon

How well each one fits the dish's main ingredients (vinegar, flour, sugar):

Fit is the average pairing score against vinegar, flour, sugar. Candidates are from the same food group and used in at least 100 recipes.
