Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the mixture as they heat, and whites add lightness when folded in.
Sugar
Sweetens the cream and helps stabilise the yolks as they cook.
Lemons
Juice and rind add acidity and bright aroma that balance the sweetness.

The step that matters

Stirring over boiling water. Egg yolks thicken gently when heated slowly and evenly. If the mixture gets too hot or is left unstirred, the yolks can scramble, leaving a grainy texture instead of a smooth cream.

Swap the lemon
