What each ingredient does

Egg whites
Form a thin, sticky film that holds the powdered sugar to the peach skin.
Powdered sugar
Forms a sweet, dry, crisp coating once the egg white film dries.
Peaches
Provide the fruit base that the sugar coating is applied over.

The step that matters

Rolling in powdered sugar after the first dip. The sugar must stick to a tacky egg white film. If the peach is too wet or the coating is applied too late, the sugar will clump or slide off. The second roll after partial drying adds a thicker, more even crust.
