Why it works: Lemon and ginger match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Citron Preserves

Ingredients

Directions

Prepare the citron

  1. Pare the citron, divide it into quarters, remove the seeds, and cut into small pieces.

  2. Weigh the fruit and use ½ pound of sugar for every pound of fruit.

  3. Cook the citron until clear, then drain and discard the cooking water.

Make the syrup

  1. In a kettle, combine the weighed sugar with enough water to wet it through and boil until clear.

  2. Add the sliced lemons and ginger to the syrup for flavor.

Cook and jar

  1. Return the citron to the kettle and cook together for about 15 minutes.

  2. Fill jars with the citron and pour the hot syrup over it, then seal the jars.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

    Shared aroma: beta-phellandrene (minty, terpene).

    Shared aroma: 2-nonenal (fatty, green).

Sugar and ginger barely smell alike, yet cooks put them together in 14,054 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Citron fruit
Forms the bulk of the preserve and provides its main texture once cooked until clear.
Sugar
Sweetens the preserve and, as a thick syrup, helps preserve the fruit.
Lemons
Add acidity and bright flavor that balance the sweetness of the syrup.

The step that matters

Cook the citron until clear. Cooking the citron until it turns clear softens the fruit and lets it absorb syrup evenly. Undercooked citron stays firm and opaque, so it will not preserve well.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, ginger):

  1. Lemonthe original
  2. Orangefits about as well
  3. Limefits less well
  4. Vanillafits less well

Fit is the average pairing score against sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
