What each ingredient does

Grapes
Provide the juice that becomes the jelly, along with its flavor and color.
Granulated sugar
Adds sweetness and helps the juice thicken and set into a gel.

The step that matters

Boiling the juice with the sugar. The sugar must dissolve fully and the mixture must reach the gel point. Boiling too briefly leaves the jelly runny, while boiling too long can make it stiff or scorch.
