Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to stiff peaks, they lighten the pudding and give it a soft, airy structure.
Egg yolks
Combined with sugar, they add richness and help set the pudding as it bakes.
Chocolate
Provides the main chocolate flavor and some richness to the pudding.
Soda crackers
Rolled fine, they add body and help thicken the mixture.

The step that matters

Folding in the egg whites. Beaten egg whites trap air that gives the pudding its lift. Stirring them in vigorously knocks out the air, so the pudding bakes up dense and flat instead of light.
