Gnocchi with Eggs

Ingredients

Directions

Make the dough

  1. In a mixing bowl, stir together the flour, water, egg yolks, sour cream, and a pinch of salt.

  2. Allow the mixture to rest until serving time.

  3. Using a teaspoon, cut small pieces of the dough to form gnocchi.

Cook and serve

  1. Cook the gnocchi in a large pot of boiling salted water, covering the pot briefly.

  2. Once the gnocchi rise to the surface, drain the water.

  3. For serving, place the gnocchi in a sauce made of hot lard and sour cream.

  4. If desired with eggs, do not add sour cream to the lard; instead, break 2 or 3 eggs over the gnocchi just before serving.

  5. Mix well and keep on the heat until the eggs are slightly set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the dough structure that holds each gnocchi together while cooking.
Egg yolks
Add richness and help bind the dough into a smooth, cohesive mass.
Sour cream
Adds moisture and tang, keeping the dough tender and the sauce creamy.
Eggs
Set with gentle heat to create a light, lightly firm coating over the gnocchi.

The step that matters

Keep the eggs on the heat until slightly set. Eggs set when proteins coagulate under gentle heat. Stopping too early leaves them runny, while overheating makes them tough and rubbery.
