Potatoe Starch
Ingredients
Directions
Wash and peel the potatoes.
Grate the potatoes using a large grater.
Fill a tub halfway with the grated potato pulp.
Add water to the tub until full.
Stir the mixture once a day for three to four days, removing any scum that forms.
On the fifth day, remove the pulp and spread it in shallow earthen pans, about 1 inch thick.
Cover the pulp with water.
Each morning, pour off the water, break up the starch, and add fresh water.
Continue this process until the starch is very white.
Leave the starch in the pans until completely dry.
Transfer the dry starch into paper bags and store in a dry place.
