Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Roast Pig

Ingredients

Directions

  1. Wash the pig thoroughly inside and out, then wipe dry with a towel.

  2. Salt the inside and stuff it with a rich fowl dressing to make it plump.

  3. Sew it up and place it in a kneeling posture in a dripping pan.

  4. Salt and pepper the outside of the pig.

  5. Pour a little water into the dripping pan.

  6. Baste the pig with butter and water a few times as it warms, then with gravy from the pan.

  7. Roast for 2 to 3 hours.

  8. To make the gravy, skim off most of the grease, stir in flour, and add water to achieve the right consistency.

  9. Season the gravy and let it boil once, then strain it into a gravy dish.

  10. Place the pig on a large platter surrounded with parsley and serve hot.

  11. When carving, cut off the head first, then split the back, remove the hams and shoulders, and separate the ribs.
