Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the filling

  1. Melt the butter in a saucepan.

  2. Add the lemon juice, lemon rind, sugar, and whipped egg; mix well.

  3. Heat the mixture on the back of the stove until thoroughly heated but do not let it boil.

Bake

  1. Pour the mixture into patty pans and add 1 teaspoon of grated cheese to each.

  2. Bake in a hot oven at 400°F (200°C) until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg
Sets the filling as it heats and bakes, giving it structure and body.
Butter
Adds richness and fat, giving the filling a smooth, tender texture.
Lemon juice
Provides acidity that gives the filling its tart, bright flavour.
Sugar
Sweetens the filling and balances the sharpness of the lemon.

The step that matters

Heat without boiling. Heating the egg mixture gently until just hot keeps the egg proteins from curdling or turning grainy. Boiling can scramble the egg and spoil the smooth set.

Swap the lemon

How well each one fits the dish's main ingredients (butter, sugar, egg, cheese):
