Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Separate the egg whites from the yolks.

  2. Add salt and baking powder to the egg whites and beat until very stiff.

  3. Gradually add sugar and flavorings, beating thoroughly.

  4. Carefully fold in the flour.

Bake

  1. Pour the batter into a cake pan.

  2. Bake in a moderate oven at 350°F (175°C) for 50 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a stiff foam that gives the cake its light, airy structure.
Sugar
Stabilizes the whipped egg white foam and adds sweetness to the cake.
All-purpose flour
Provides the starch and gluten that set the cake's structure as it bakes.
Baking powder
Releases gas during baking to help the cake rise.

The step that matters

Carefully fold in the flour. Folding gently keeps the air trapped in the whipped egg whites. Stirring or deflating the foam makes the cake dense and flat.
