Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Main vegetable that becomes crisp-tender pickles once brined and soaked in vinegar.
Coarse sea salt
Draws water out of the cucumbers during brining, firming them and seasoning the pickles.
Vinegar
Provides the acidity that preserves the cucumbers and gives the pickles their sharp flavor.
Peppers
Add heat and pepper flavor to the pickling liquid and the cucumbers.

The step that matters

Weighing down the cucumbers under the vinegar. The cucumbers must stay fully submerged in the vinegar; any exposed piece can spoil or grow mold. Weighting with a plate and stone keeps everything under the liquid while it cures.

Swap the mace

How well each one fits the dish's main ingredients (cucumber, vinegar, pepper, clove):

  1. Allspicefits better
  2. Tarragonfits better
  3. Dillfits better
  4. Macethe original

Fit is the average pairing score against cucumber, vinegar, pepper, clove. Candidates are from the same food group and used in at least 100 recipes.
