Pickled Onions

Ingredients

Directions

The book gives no oven temperature. The 380°F (193°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Select small onions that are perfectly sound and of equal size.

  2. Peel the onions and scald them in salt water until tender.

  3. Drain the onions and place them into glass jars.

  4. Heat vinegar to 380°F (193°C) and mix in whole cloves and mace.

  5. Pour the hot vinegar over the onions, distributing the spices among the jars.

  6. Seal the jars air-tight after pouring the vinegar over the onions.
