French Fried Potatoes
Ingredients
Directions
The book gives no oven temperature. The 400°F in the steps was added when the recipe was transcribed, as a starting point.
Peel the potatoes and slice them lengthwise into ¼ inch thick slices.
Soak the slices in cold water for 1 hour.
Remove the slices from the water and dry them with a cloth.
Fry the slices in hot lard (400°F / 200°C).
For puffier potatoes, remove them with a skimmer before fully cooked, drain, and return to the hot lard until done.
Sprinkle with fine salt and serve hot.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
