What each ingredient does

Cauliflower
Forms the main body of the dish and becomes tender as it cooks.
Milk
Adds richness and a mild sweetness to the cooking liquid.
Melted butter
Adds fat and rich flavour when served over the cauliflower.

The step that matters

Removing the cauliflower when the stalks are tender. Cauliflower keeps cooking from residual heat after it leaves the pot, so leaving it in too long makes it soft and watery. Removing it promptly keeps the florets firm and crisp.
