Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal knuckle or shank
Releases flavor and gelatin into the water, giving the broth body.
Cream
Adds richness and a smooth, silky mouthfeel to the soup.
Cornstarch
Thickens the cream mixture so the soup becomes lightly body-rich.
Egg yolk
Adds richness and helps thicken the cream when gently heated.

The step that matters

Stir the cream mixture into the soup. Adding the cream mixture straight into hot soup can curdle the egg yolk. Tempering it first with a little hot soup gradually warms the yolk so it blends in smoothly and thickens evenly.

Swap the celery

How well each one fits the dish's main ingredients (veal, cream, egg):

  1. Nutmegfits better
  2. Tarragonfits better
  3. Capersfits about as well
  4. Celerythe original

Fit is the average pairing score against veal, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
