What each ingredient does

Round steak
Main cut that becomes tender during slow, covered cooking in liquid.
Flour
Coats the steak so it browns well and helps thicken the sauce.
Tomatoes
Provide acidity and liquid that gently braise the meat.
Onion
Adds sweetness and savory depth as it softens into the sauce.

The step that matters

Cook slowly for 2 to 3 hours. Low, covered heat breaks down the tough connective tissue in round steak into gelatin, making the meat tender. Rushing with high heat leaves it tough and dry.

Swap the onion

How well each one fits the dish's main ingredients (flour, meat, tomato, pepper):

  1. Capsicumfits better
  2. Okrafits better
  3. Eggplantfits better
  4. Onionthe original

Fit is the average pairing score against flour, meat, tomato, pepper. Candidates are from the same food group and used in at least 100 recipes.
