Why it works: Milk and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 81,283 recipes. Both carry (z)-4-heptenal, which smells biscuit, cream. The science ↓
Orange Cream Pie
Ingredients
Directions
The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Dissolve corn starch in ½ cup of warm milk.
Add beaten egg yolks to the milk and mix well.
In a saucepan, boil 1½ cups of milk with butter and sugar.
Pour the hot milk mixture over the corn starch mixture while beating well.
Return the mixture to the saucepan and let it simmer.
Pour the filling into a baked pie shell.
Beat the egg white until stiff, then add 2 teaspoons of sugar and spread over the top.
Brown in a cool oven at 300°F (150°C).
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
