French Cream Bars

Ingredients

Directions

Prepare the fondant

  1. Divide the fondant into three equal parts and color them white, pink, and brown with different flavors.

  2. Grate 2 squares of Baker's bitter chocolate, melt it, and knead it into the brown fondant.

  3. Roll out each colored fondant in layers, using a little corn starch on the rolling pin.

Assemble and set

  1. Arrange the layers in pans with removable sides.

  2. Once cold, remove the sides and cut into bars or cubes.

  3. Add nuts if desired.

What each ingredient does

Fondant
Forms the sweet, firm body of the bars as its layers set.
Baker's bitter chocolate
Adds bitterness and deep color to the brown layer, balancing the fondant's sweetness.
Corn starch
Keeps the rolled fondant from sticking to the rolling pin and the work surface.

The step that matters

Kneading the melted chocolate into the fondant. Melted chocolate stiffens and seizes when mixed into cold sugar paste unevenly, so it must be fully blended to give smooth, uniform brown fondant without streaks or lumps.

Swap the nuts

The recipe marks nuts as optional. How well each one fits the dish's main ingredients (chocolate, corn):

  1. Peanutfits better
  2. Almondfits better
  3. Hazelnutfits better
  4. Nutsthe original

Fit is the average pairing score against chocolate, corn. Candidates are from the same food group and used in at least 100 recipes.
