Why it works: Sugar and syrup match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Taffy Kisses

Ingredients

Directions

The book gives no oven temperature. The 240°F in the steps was added when the recipe was transcribed, as a starting point.

  1. In a saucepan, combine sugar, water, corn syrup, and butter. Cook over medium heat until the mixture reaches the soft ball stage (around 240°F or 115°C).

  2. Remove from heat and let cool slightly. If desired, add flavoring and food coloring.

  3. Pull the taffy until it is about 1 inch thick, then cut into strips that are ½ inch thick and 2 inches long using dull scissors.

  4. For striped taffy, lay 2 or 3 rows of colored taffy lengthwise on the pulled taffy, then pull and cut again.
