Why it works: Vinegar and pepper are a kitchen classic. They rank in the top 14% of all ingredient pairs, and cooks put them together in 27,814 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Lobsters
- Provide the main meat that forms the body of each pie.
- Butter
- Adds richness and fat, carrying flavour into the gravy.
- Puff pastry
- Forms a flaky, golden crust that encloses the filling while baking.
The step that matters
Stewing the shells in the gravy. Bruising the shells and stewing them for the full 30 minutes extracts flavour and body into the liquid. Too short a stew yields a weak, thin gravy that does little for the filling.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
