Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the cream into a custard as they gently set with heat.
Cream
Provides richness and body, forming the base of the custard.
Sweet almonds
Supply nutty flavour and body when pounded into a paste.
Sugar
Sweetens the custard and balances the bitter almond flavour.

The step that matters

Stirring the egg mixture into the cream over low heat. Egg yolks thicken through gentle heat; if the heat is too high, they can scramble and curdle the custard instead of smoothly thickening it.
