Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the main apple flavour and pectin that helps the juice set into a jelly.
Sugar
Adds sweetness and helps give the set jelly its body and clarity.
Egg whites
Bind to small particles in the liquid so they can be strained out, leaving it clear.
Lemon juice
Adds acidity that brightens the apple flavour and supports the set.
Stock
Adds savoury body to the liquid, forming the base of the jelly.

The step that matters

Simmer for 15 minutes and strain until clear. Egg whites must be heated gently so they coagulate and trap cloudy particles. Boiling too hard or straining too early leaves the jelly murky.

Swap the apple

How well each one fits the dish's main ingredients (sugar, lemon, egg):

  1. Orangefits better
  2. Vanillafits better
  3. Limefits better
  4. Applethe original

Fit is the average pairing score against sugar, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
