Calf’s Liver, Baked

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash and dry the liver, then lightly flour and pepper it.

  2. Lay a few slices of fat bacon on top of the liver.

Bake and serve

  1. Cook in a moderate oven at 350°F (175°C), basting occasionally with the bacon fat.

  2. When nearly done, remove the bacon and sprinkle the liver with breadcrumbs.

  3. Brown the surface nicely and serve with plain gravy made in the pan or a sauce of your choice.

What each ingredient does

Calf's liver
Forms the main body of the dish, cooked gently so it stays moist inside.
Flour
Lightly coats the liver so its surface can take on color and hold moisture.
Fat bacon
Melts and bastes the liver, adding fat that keeps it moist and flavorful.
Breadcrumbs (in the method)
Form a crisp, browned crust on the surface during the final minutes of baking.

The step that matters

Basting with bacon fat. Liver is lean and dries out and toughens quickly in heat. Regular basting with fat keeps the surface moist and helps the bacon flavor penetrate, so the liver stays tender rather than tough.
