What each ingredient does

Celery
Forms the main body of the dish and becomes tender through slow braising.
Brown stock
Provides the liquid that cooks the celery and forms the savory gravy.
Butter
Adds richness and fat that carries flavor and helps the celery brown lightly.
Onion
Builds savory depth and aroma as it softens in the pan.
Carrot
Adds sweetness and aromatic flavor to the braising liquid.

The step that matters

Cook the celery gently. A gentle, long simmer lets the fibrous celery soften evenly through its core; boiling hard can break the stalks apart and toughen the outer layers.
