What each ingredient does

French chestnut flour
Thickens the milk and gives the cream its body and nutty flavor.
Egg yolk
Enriches and thickens the cream as it sets.
Thick cream
Adds richness and a smooth, soft texture.
Milk
Forms the liquid base that the chestnut flour thickens.

The step that matters

Gradually add the mixture to the boiling milk. Adding the paste slowly and stirring keeps the starch dispersed so it does not form lumps, giving a smooth cream.

Swap the chestnut
