Ingredients

Directions

Prepare the base

  1. Melt the gelatin in the milk.

  2. Add the melted gelatin to the whipped cream and rum.

  3. Rasp the sugar on the lemon, crush it to powder, and add it to the mixture.

  4. Color the mixture with saffron.

Mould and set

  1. Mould in a shallow dish and top with clear jelly.

  2. If desired, reduce the milk proportionally for more fruit juice.

  3. Soak fruits in a little spirit, roll in fine sugar, and stir in just before the mixture sets.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the cream into a firm, sliceable structure as it cools.
Cream
Provides richness and a light, airy texture when whipped.
Rum
Adds aroma and flavour to the mixture.
Sugar
Sweetens the cream and balances the rum and citrus.
Milk
Carries the gelatin so it dissolves evenly before being added to the cream.

The step that matters

Add the fruit just before the mixture sets. Gelatin begins to firm as it cools, so stirring the soaked fruit in too early can leave it unevenly distributed. Adding it at the right moment keeps the fruit suspended through the cream.

Swap the saffron

How well each one fits the dish's main ingredients (gelatin, milk, cream, rum, sugar, lemon):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Peppermintfits better
  4. Saffronthe original

Fit is the average pairing score against gelatin, milk, cream, rum, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
