Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carrots
Provide the main flavour, colour and body of the soup.
Butter or dripping
Fat that carries flavour during frying and softens the vegetables without browning.
Flour
Thickens the soup as it boils, giving it a smoother body.
Milk
Adds richness and a softer, creamier texture to the finished soup.

The step that matters

Frying without browning. Frying gently in fat softens the vegetables and builds flavour. If they brown, the soup can taste bitter or harsh and its colour turns muddy.

Swap the onion

How well each one fits the dish's main ingredients (milk, carrot, turnip, celery, butter, flour, pepper):

  1. Parsnipfits better
