Ingredients

Directions

Prepare the vegetables

  1. Peel and slice the onions, potatoes, and celery.

  2. Heat the butter in a stewpan and cook the vegetables slowly for about 15 minutes, stirring frequently to prevent browning.

Make the soup

  1. Add the stock and simmer gently until the vegetables are tender, about 1 hour.

  2. Rub the mixture through a fine sieve back into the stewpan.

  3. Add the milk and bring to a boil.

  4. Mix the flour smoothly with a little milk, pour it into the soup, stir, and simmer for a few minutes.

  5. Season to taste and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Break down into sweet, savoury flavour and body when cooked slowly in butter.
Potatoes
Starch that softens and thickens the soup as it is puréed.
White stock
Liquid base that cooks the vegetables and forms the body of the soup.
Flour
Thickens the soup, giving it a smoother, heavier texture.
Butter
Fat that carries flavour and helps the vegetables cook gently.

The step that matters

Cook the vegetables slowly in butter without browning. Stirring frequently over gentle heat softens the vegetables and builds flavour. If they brown, the soup can taste bitter or scorched rather than mellow and sweet.
