Lobsters, to Dress

Ingredients

Directions

  1. Wash the lobsters well.

  2. Tie the claws securely.

  3. Boil a saucepan of salted water.

  4. Add the lobster head first and boil gently for 20 to 40 minutes, depending on size.

  5. Avoid overcooking to prevent hard flesh.

  6. Once cool, rub with a little salad oil to brighten the color.

  7. Break off the claws and divide the tail lengthwise.

  8. Place the lobster body upright in the center of a dish, with tail halves on either side and claws at the ends.

  9. Crack the claws with a hammer without injuring the flesh.

  10. Garnish with parsley.
