Sole, with Fine Herbs

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Melt the butter in a sauté pan.

  2. Add the stock, shallots, parsley, salt, and pepper, and warm gradually.

  3. Wash and skin the sole, then add it to the pan when the mixture is hot.

Cook and serve

  1. Cover closely and cook in a moderate oven at 350°F (175°C) for about 30 minutes.

  2. Just before serving, stir in the anchovy and Harvey sauce.

  3. Place the sole on a hot dish and pour the sauce over it.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sole
Forms the main body of the dish, cooked gently in the covered pan until flaky.
Stock
Provides the liquid base for the sauce and keeps the fish moist while it cooks.
Butter
Adds richness and fat, carrying flavour into the warm liquid and sauce.
Shallots
Contribute a mild, savoury onion flavour that sweetens as the sauce warms.
Anchovy sauce
Adds a salty, savoury depth to the sauce.

The step that matters

Cover closely and cook gently. A tight cover traps steam so the sole cooks through in its own moisture and stays tender. Lifting the lid or overcooking will dry the flesh and make it flake poorly.

Swap the shallot

How well each one fits the dish's main ingredients (butter, parsley, anchovy, sauce, pepper):

  1. Shallotthe original
  2. Capsicumfits about as well
  3. Chivefits less well
  4. Carrotfits less well

Fit is the average pairing score against butter, parsley, anchovy, sauce, pepper. Candidates are from the same food group and used in at least 100 recipes.
