Ingredients

Directions

Prepare the sweetbreads

  1. Soak the sweetbreads in water for about 2 hours, changing the water three or four times.

  2. Drain well and place in a pot with just enough cold water to cover them.

  3. Add a little salt, bring to a boil, and cook gently for about 15 minutes.

  4. Press between two dishes until cold.

Coat and fry

  1. Roll lightly in seasoned flour, coat with beaten egg, and then breadcrumbs.

  2. Fry in hot fat until lightly browned.

  3. Serve the gravy or sauce separately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lambs' sweetbreads
Main protein; the tender, mild meat is the centre of the dish.
Egg
Binds the flour and breadcrumb coating so it adheres during frying.
Breadcrumbs
Form a crisp, golden outer crust when fried.
Flour
Dry coating that helps the egg and breadcrumbs stick and aids browning.
Gravy or suitable sauce
Adds moisture and savoury richness alongside the crisp coating.

The step that matters

Press the sweetbreads until cold. Pressing while cooling compacts the tissue so the piece holds its shape and stays intact through coating and frying. Cooling fully before coating also keeps the egg and crumbs from becoming soggy or sliding off in hot fat.
