Roast Mutton
Ingredients
Directions
The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Preheat the oven to 400°F (200°C).
Baste the mutton joint with hot fat before placing it in the oven.
Roast the joint in the hot oven for 10 to 15 minutes to form a hard surface layer.
Baste the joint almost continuously during the first few minutes, then at short intervals.
Continue roasting until done, checking the size and condition of the joint for timing.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
