Why it works: Carrot and pepper match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 14,555 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Pigeons, Stewed

Ingredients

Directions

Prepare the pigeons

  1. Cut each pigeon into 4 pieces and fry them brown in the butter.

Stew

  1. Add the hot Espagnole sauce and claret (if using) to the pan, cover closely, and stew gently for about 35 minutes, or until the birds are tender.

Cook the vegetables

  1. Strain the butter into a small saucepan, add the onions, and cook until tender and well browned.

  2. Boil the carrots and peas separately, then drain them well.

Serve

  1. Arrange the pigeons on the fried bread, strain the sauce over, and group the onions, peas, and carrots tastefully around the dish before serving.

What each ingredient does

Pigeons
Provide the main meat, which becomes tender through slow, covered stewing.
Espagnole sauce
Forms the rich brown sauce that moistens the birds and coats the dish.
Butter
Browns the pigeon pieces and carries flavour into the onions.
Button onions
Add sweetness and savoury depth when cooked until well browned.
Claret
Adds acidity and wine flavour to the sauce, though it is optional.

The step that matters

Stew gently with the pan covered. Low, covered heat lets the tough connective tissue in pigeon break down slowly, so the birds become tender without drying out. Boiling hard would toughen the meat and reduce the sauce too quickly.

Swap the peas

How well each one fits the dish's main ingredients (sauce, butter, onion, carrot, pepper, bread):

  1. Beansfits better
  2. Sesamefits about as well
  3. Chestnutfits about as well
  4. Peasthe original

Fit is the average pairing score against sauce, butter, onion, carrot, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
