What each ingredient does

Asparagus
Is the main vegetable, cooked by boiling until tender in salted water.

The step that matters

Cook gently until tender. Boiling vigorously can break up the tips and overcook the stalks unevenly. A gentle simmer cooks the thick stalks and delicate heads at a similar rate, giving a tender, evenly cooked spear.
