Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich and bind the batter, while whipped whites lighten its texture.
Breadcrumbs
Form the bulk of the pudding and absorb the liquid to set its body.
Honey
Adds sweetness and moisture, and helps the pudding brown slightly.
Hominy or semolina
Thickens the milk into a soft starch that helps hold the pudding together.
Butter
Adds richness and fat, giving a tender crumb and smooth mouthfeel.

The step that matters

Folding in the egg whites. Whites hold air only while stiff. Overmixing or stirring vigorously knocks the air out, leaving a dense pudding. Fold gently so the batter stays light.
