Ingredients

Directions

Make the sponge

  1. Heat the water, sugar, gelatin, and thinly sliced lemon rind together until the gelatin dissolves.

  2. Strain the mixture into a large bowl, then add the egg white and lemon juice, mixing well.

  3. Whisk the mixture until stiff peaks form.

Serve

  1. Transfer to a serving dish, and if desired, color a portion with carmine or cochineal and place it on top.

  2. Alternatively, set the sponge in a mold and turn it out when firm.

What each ingredient does

Leaf gelatine
Sets the liquid so the whisked mixture holds its shape when chilled.
Egg white
Whisks into a foam that gives the sponge its light, airy texture.
Castor sugar
Sweetens the dish and helps stabilise the whisked egg white foam.
Lemon
Supplies the lemon flavour and acidity that brightens the sweet dessert.

The step that matters

Whisk the mixture until stiff peaks form. Egg white foam traps air and gives the sponge its lightness. The mixture must be cool enough that the gelatine has not yet set, but not so cold or thick that it cannot be whipped to full volume. Stop once stiff peaks form, since overwhipping makes the foam grainy and it can collapse.
