Lemon Sorbet

Ingredients

Directions

Make the syrup

  1. Combine the loaf sugar and water in a saucepan.

  2. Heat until the sugar dissolves, then bring to a boil and reduce slightly, skimming off any foam.

Add the citrus and cool

  1. Add the grated rind of 2 lemons and the juice of the lemons and oranges.

  2. Bring to a boil again, then strain the mixture and let it cool.

Freeze

  1. Partially freeze the mixture.

  2. Fold in the whisked egg whites and castor sugar.

  3. Continue freezing until you reach the desired consistency.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Provide the main acidity and aroma, with rind and juice both flavouring the sorbet.
Loaf sugar
Dissolves into the water to form a syrup that sweetens the sorbet and keeps it from freezing rock hard.
Egg whites
Whisked and folded in to add lightness and a smoother, airier texture.
Castor sugar
Folded in with the egg whites, sweetening and helping stabilise their foam.

The step that matters

Partially freeze before folding in the egg whites. Folding whisked whites into a mixture that is still too liquid lets them deflate and sink, while a partly frozen base holds air and gives a lighter texture.

Swap the orange

How well each one fits the dish's main ingredients (lemon, sugar, egg):

  1. Orangethe original
  2. Vanillafits about as well
  3. Limefits less well
  4. Raisinfits less well

Fit is the average pairing score against lemon, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
