Why it works: Orange and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,634 recipes. Both carry 3-hexenal, which smells apple, fruity. The science ↓

Ingredients
Directions
Prepare
Soak the gelatine in cold water.
Blanch the almonds or pistachios and chop them coarsely.
Remove the ends of the orange and lemon in thin strips.
Make the jelly
In a copper sugar-boiler or stewpan, combine the loaf sugar, water, and strained juice of the orange and lemon.
Bring to a boil, then add the gelatine and simmer until dissolved.
Strain the mixture into a basin and stir in the rum.
Let the mixture sit until it is almost set, then stir in the almonds or pistachios.
Pour the mixture into a wetted round tin.
Set and serve
Once set, turn the jelly out, cut it into 1-inch square pieces, and roll them in icing sugar.

What each ingredient does
- Loaf sugar
- Provides the sweetness and bulk that give the jelly its body.
- Leaf gelatine
- Sets the liquid into a firm, sliceable jelly as it cools.
- Almonds or pistachios
- Add crunch and nutty flavour against the soft jelly.
- Icing sugar
- Coats the cut pieces, keeping them from sticking together and adding sweetness.
The step that matters
Let the mixture sit until almost set before adding the nuts. Gelatine begins to thicken as it cools. If the nuts go in while the mixture is too liquid, they sink to the bottom instead of staying evenly distributed through the jelly.
