Directions

Cook the macaroni

  1. Break the macaroni into small pieces and boil in slightly salted water for about 5 minutes.

  2. Drain the macaroni well.

Fry and brown

  1. Cut the bacon into small dice and fry in a sauté pan until slightly cooked.

  3. Stir gently over the heat until the macaroni is nicely browned.

What each ingredient does

Macaroni
Forms the bulk of the dish and absorbs stock, giving it a tender, starchy body.
Streaky bacon
Adds salty, savoury fat that flavours the macaroni and browns in the pan.
Stock
Liquid that the macaroni cooks in, carrying flavour into the pasta.
Butter
Adds fat and richness, helping the macaroni brown in the pan.

The step that matters

Stir gently until the macaroni is nicely browned. Cooked pasta that is too wet or crowded will steam rather than brown, and overstirring or over-softened pasta can break apart and turn mushy. Keeping the pieces mostly still over steady heat lets the surfaces caramelise.

Swap the nutmeg

How well each one fits the dish's main ingredients (butter, pepper):

  1. Parsleyfits better
  2. Sagefits better
  3. Thymefits better
  4. Nutmegthe original

Fit is the average pairing score against butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
