Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pine kernels
Provide fat and nutty flavour that gives the galantine richness.
Cashew nuts
Add body and a soft, creamy texture to the paste.
White breadcrumbs
Absorb moisture and bind the nuts so the roll holds its shape.
Small egg
Sets when heated, helping the paste hold together after steaming.

The step that matters

Pressing the roll after steaming. Pressing under a weight while the roll cools compacts the paste, so it slices cleanly and holds its shape rather than crumbling.

Swap the clove

How well each one fits the dish's main ingredients (pine, cashew nut, garlic, sauce, egg, pepper):

  1. Capersfits better
