What each ingredient does

Potato
Provides the bulk and soft, starchy body of the omelet once sieved.
Eggs
Yolks bind the mixture and whites, whisked stiff, lighten it and help it set.
Butter
Fats the pan and adds richness and browning to the outside of the omelet.
Lemon juice
Adds a light acidity that brightens the mild flavor of the potato and eggs.

The step that matters

Folding in the egg whites. Whites whisked to stiff peaks hold air that lifts the omelet. Folding gently keeps that air in, while stirring hard would deflate it and leave a dense result.

Swap the potato

How well each one fits the dish's main ingredients (egg, butter, lemon, nutmeg, pepper):

  1. Spinachfits better
  2. Shallotfits better
  3. Asparagusfits better
  4. Potatothe original

Fit is the average pairing score against egg, butter, lemon, nutmeg, pepper. Candidates are from the same food group and used in at least 100 recipes.
